The Brandade of Nīmes is a white and creamy purée made from codfish and olive oil. In the beginning, sailors who caught cod in Newfoundland traded it for bags of salt in Aigues Mortes.
Gardiane de Tareau, another local specialty, is a traditional dish made of bull steaks marinated in Costičres de Nīmes wine.
